Grilled Tofu with Tomato Salsa

Featuring Paul Newman’s Own® Classic Dressing

Serves: 4


1 pkg (350 g) extra-firm tofu, cut crosswise into 1 cm thick slices
1/3 cup Paul Newman's Own Classic Dressing
2/3 cup couscous
2 shallots, chopped
2 tomatoes, seeded and diced
Pinch each salt and pepper
handful of basil leaves



1. Place tofu on greased bbq grill over medium-high heat; close cover and grill, turning once and brushing occasionally with 1/4 of the dressing until warmed through, about 6 minutes.

2. Meanwhile, pour couscous into bowl; stir in half of the green onions and the salt and pepper. Pour in 1 cup boiling water; cover with plastic wrap and let stand until liquid is absorbed, about 5 minutes. Fluff with fork.

3. In small bowl, toss together tomatoes and remaining green onions and dressing. Arrange couscous on plate; top with warm tofu and tomato mixture. Garnish with basil.
