Classic Caesar Salad

Featuring Paul Newman’s Own® Caesar Dressing

Makes 4 servings


4 boneless skinless chicken breasts
2 cups (500 mL) Paul Newman's Own Caesar Dressing*, divided
2 heads cos, washed and torn in bite-sized pieces
2 cups croutons
3/4 cup freshly grated Parmesan cheese
2 large ripe vine ripened tomatoes, cored and cut in sixths


1. Place chicken in glass baking dish. Pour 1 cup (250 mL) Paul Newman's Own Caesar Dressing over chicken. Cover with plastic wrap. Put chicken in refrigerator and let marinate for several hours or overnight. Remove chicken, and discard marinade.

2. Preheat oven to 425°F (220°C). Place chicken breasts in baking dish and cook for 15 minutes or until chicken is no longer pink inside. Remove from oven and let cool. Slice chicken lengthwise into strips.

3. Toss romaine lettuce in a bowl with remaining Paul Newman's Own Caesar Dressing, about 1 cup (250 mL). Add croutons and Parmesan; toss.

4. Arrange lettuce on plates and add tomato slices. Place chicken slices on top of lettuce bed and serve.
