Rocket, Goat's Cheese & Cranberry Salad with Maple Glazed Pecans

Featuring Paul Newman’s Own® Balsamic Dressing

Preparation time: 10 minutes (plus cooling)
Cooking time: 5 minutes
Serves: 4

½ cup pecan nuts
2 tsp maple syrup
100g baby rocket
1/3 cup dried cranberries
¼ cup sliced dried apricots
¼ cup sliced shallots
¼ cup Paul Newman’s Own Balsamic Dressing *
80g soft goat's cheese


1. Preheat oven to 180ºC. Line a baking tray with non-stick baking paper. Place pecan nuts and maple syrup in a small bowl and stir to combine. Place on prepared tray and roast for 5 minutes (be careful not to burn the nuts). Remove from oven and set aside to cool.

2. Combine rocket, cranberries, apricots and shallots in a bowl. Add dressing and toss to combine. Place on a serving platter and top with goats’ cheese and maple glazed pecans.
